Easy Blackberry Cobbler

Easy Blackberry Cobbler. Oh, so easy. I’m not a baker of extraordinary capabilities, this I tell you frankly and freely. It comes from a lack of actual baking experience as well as knowing that what I bake will be quickly consumed by SBJ and moi. That’s a lot of calories and if it’s in the house it’s goin’ in my mouth. So. This Easy Blackberry Cobbler is dreamy because it’s delicious — it takes care of these gigantic, tasty berries — and –it is easy.

Let’s talk about the berries.

The blackberries growing on the vines in our backyard are huge.

Huge and plentiful.

[Which is all kinds of wondrous and delicious.]

We’ve eaten them plain, with ice cream, with whipping cream, and plain, again. They’ve been gifted and gifted and then eaten some more. We’ve even frozen them aaaand we still have bunches and bunches. We’re not tired of them, by any stretch of the imagination — it’s just that they don’t stay yummy indefinitely. Which brings us to the point of the post where we start talking about easy.

‘Easy’ as in simple, straightforward, and uncomplicated.

A friend posted a link on my Facebook page to a recipe for an easy Blackberry Cobbler. [Thank you, Erica.] I pinned the recipe and tested it.

I tested and then tasted it.

It’s delicious. Here’s the original recipe and here’s what went down when I put it together.

 

Easy Blackberry Cobbler

 

Here’s what you’ll need:

— a stick of butter [minus just enough cut off of the end to butter the pie pan]

— 1 cup and 3 Tbsps. sugar

— a cup of self-rising flour
[If you don’t have self-rising flour simply whisk 1 1/2 tsp of baking powder and a pinch of salt into 1 cup of flour.]

— 1 cup of milk
[I used skim because that’s what we had.]

— 2 generous cups of blackberries, rinsed and patted dry

That’s it. Five ingredients.

 

Here’s what you do.

Preheat oven to 350°.

Cover the baking dish on the bottom and sides with butter.

[I used a 9″ stoneware pie dish.]

Melt the remaining butter. Set it aside.

Pour 1 cup of sugar and the self-rising flour into a medium bowl. Whisk together.

     If you don’t have any self-rising flour on hand, try this:

How to make Self-Rising Flour

1 cup flour

1 1/2 tsp baking powder

1/8 tsp salt

Mix the ingredients uniformly with a whisk or a fork.

 

Whisk 1 cup of milk into the flour and sugar mix.

 

Pour the melted butter into the mixing bowl as you whisk everything together.

     [Whisk it all for a tasty blackberry cobbler.] 

 

     [Did I mention that this was an easy Blackberry Cobbler?]

Pour the batter into your buttered baking dish.

Grab the delicious berries carefully so you don’t smash and smush them.

Place/sprinkle the berries in the dough.

     [Those berries are huge, right?]

Sprinkle 3 Tbsps. of sugar over the top of the cobbler.

Put the cobbler in the oven for an hour or until it is perfectly golden and bubbly.

Meanwhile, look at this picture.

As an added bonus, your house will smell divine.

When it’s done, serve it with whipping cream or vanilla ice cream or with cream poured over the top.

So delicious.

Easy Blackberry Cobbler

1 stick of butter [minus just enough cut off of the end to butter the pie pan]

1 cup plus 3 Tbsp sugar

1 cup of of self-rising flour

1 cup of milk

2 generous cups of blackberries, rinsed and patted dry

Preheat oven to 350. Grease a 9" round baking dish.

Melt butter, and set aside.

Pour 1 cup of sugar into a medium bowl.

Add 1 cup of self-rising flour.

Mix.

Gently whisk milk into flour and sugar mixture.

Add the slightly cooled, melted butter into the bowl and whisk.

Pour the batter into your buttered baking dish.

Place/sprinkle the blackberries in the dough.

Sprinkle 3 Tbsps. of sugar over the top of the cobbler.

Bake the cobbler for an hour OR until it's perfectly golden and bubbly.

Let it cool for 15 minutes.

Serve with ice cream, whipped cream, or a glass of milk.
