Baked Pumpkin Donuts

I’ve been thinking about donuts today, which is odd considering that there are a multitude of items that come before it on my list of favorite things to eat. Not that they aren’t yummy–because they certainly are or can be.

Ahh–the delight of a well-made donut.

 

While we were there, they treated us to old-fashioned delectable donuts from a place called Top Pot.

Oh-oh-yum.  Donuts–Top Pot donuts, at least–are now topping the list of my favorite treats.

[If you love donuts and you visit Seattle–you’ll want to make a stop. And, no, no, no I’m not getting paid to say this.  I wish I was getting a donut to say this.  I’m not.]

We’ve been in Beijing for long enough that I would eat a baker’s dozen of these delicious morsels of awesomeness if they were set in front of me.  That is not to say that I don’t like Beijing, because I do. It’s not even to say that we’ve been here for very long, because we haven’t. They just don’t have donuts.

And we don’t have access to a kitchen so we’ve been eating food that everyone else makes.

Except for the oatmeal we make in the mornings. We pack that comfort food with us wherever we go. One taste of that stuff and–insert the sounds of a heavenly angel chorus here–it doesn’t matter what is ailing me–all is right with the world.

Aaaand that’s not a hundred percent for sure for certain because at this very moment I am within looking and actual cooking distance of the oatmeal stash in our suitcase and am still longing for a donut.

Which brings me to this:  pumpkin donuts.

And–yes–they were that color [unless your screen is making them look purple or something].

I pinned this recipe a while ago because I love pumpkin almost everything except pie.

[I know. It doesn’t make sense to me either. I love pumpkin stuff. I love pie. I haven’t tasted a tasty pumpkin pie. I mean no Thanksgiving slander to anyone.]

We purchased the special little doo-dah pan because we really wanted donuts.

[You can make muffins as well–which we decided to do with the remaining dough. These are teeny, tiny out of focus muffins.]

 

I thought I’d brighten up the page with a photo of the wet ingredients and spices mixed together.


[It’s not the kind of dough you want to snitch while you’re cooking.]

I also thought I’d add a photo of a tiny little surprise.

That is a suspiciously large spice particulate. Do you recognize what it is?

Handsome Dude suggested we add some chocolate chips next time, instead.
