On the lighter side

 

It has been a moment or two since I’ve done any pintesting.

 
[And it’s not because I don’t have pin boards filled to the brim with things to try–because I certainly have a few of those.]

Here’s what I Pinned ‘n’ Tested this week: Cajun Chicken and Pasta on the Lighter Side.
 
[Don’t be mistaken and think that the kitchen will be filled with the sounds of laughter and jocularity.  The lighter side refers to calories. I think.]

FYI:
 
–I’m a little bit confused about it being “lighter” — as in calories
 
–I’m not confused about it being tasty
 
–julienne the peppers
 
–use 1 1/2 – 2 Tbsp flour (instead of 1) for a thicker sauce
 
–a mix of shrimp and chicken is delicious
 
–our Cajun seasoning had msg in it
 
–there are plenty of recipes for homemade cajun seasoning to use, including this one
 
–you will make a ‘slurry’
 
[Here is the real and true definition of slurry: a watery mixture of insoluble matter, such as mud, lime, or plaster of paris. That is not what it tastes like at all.]
 
–1 tsp of Cajun seasoning was enough heat
 
–leave the chicken partially frozen to make it easier to cut into strips
 
 
And there you have it.

It was delicious.
 
And–I love adding purple cabbage to a green salad.
 
It’s tasty.
 
It looks fabulous.
