Pumpkin pancakes and family
Pumpkin pancakes and family.
Which brings us to this: Pumpkin Pancakes.
[That needs to be bigger.]
Pumpkin Pancakes
I found a recipe on Pinterest.
[Still lovin’ that spot on the internet.]
[Still lovin’ that spot on the internet.]
It came from Sweet Pea’s Kitchen–here’s the recipe.
Ingredients
— 1 1/4 cups flour
— 2 Tbsp sugar
— 2 tsp baking powder
— 1 tsp cinnamon
— 1/2 tsp ground ginger
— 1/2 tsp salt
— 1/8 tsp nutmeg
— a pinch of ground cloves
— 1 cup buttermilk
[We used 1 cup of buttermilk instead of 1 cup of milk. If the batter seems thick, add buttermilk a little bit at a time.]

— 6 Tbsp canned pureed pumpkin
— 2 Tbsp melted butter, melted
— 1 egg
— 1/2 cup chopped walnuts or pecans
In a medium size bowl, whisk the flour and the next eight ingredients together.
In a separate bowl, stir the buttermilk, pureed pumpkin, melted butter, and egg together.
Fold this mixture into the dry ingredients.

There’s nothing special about the way you cook these delicious things.
Use approximately 1/4 cup of batter per pancake. Cook them for 2-3 minutes on each side or until they are golden brown.

Serve them with warm syrup and chopped walnuts or pecans.
[Unless you are allergic to nuts and then you wouldn’t add the nuts.]
Nutella.
I thought that now would be a splendid time to bring that up. Nutella is heavenly on pumpkin pancakes.
These next few moments of blogging will go down in history as a blogging miracle.
This is a scratch and sniff pumpkin pancake [with syrup] picture.
Oh, I wish because I’d be scratchin’ my screen like a crazy woman.
That is so much more pleasant than felly smish or shrinky stimp.
So much more pleasant.
Warning.
If you don’t like the smell of deliciousness, don’t make these pancakes.
And there you have it.
Pinned and Tested.
You go ahead and put your nose right up to the screen.
They. smell. delicious.
I will make them again. With buttermilk. And maybe with chocolate chips.
[You know that you can make these in another month besides the pumpkin months, right?]
Happy Month of Thanks and Giving.
